Marwari food is from Rajasthan. The scarcity of water and green vegetables, due to the dry desert climate, influenced the cooking style of the local people. Rarely has the world seen so rich a cuisine from so little that is available in the land. While the eastern region of the state has fertile soil capable of many different crops, for most part of Rajasthanâ??s terrain even basic agriculture is a challenge. Yet, the people live, eat and celebrate. They have created an exotic cuisine from the land that throws up only a few pulses, crops of millet, and beans.
